Combine flour, brown sugar, salt, and yeast in the bowl of your stand mixer

In a separate container, whisk together 3 whole eggs and 3 egg yolks. Save egg whites for layer.

Add eggs and water to the center of the flour mixture.

pour eggs & water in the middle of the flour mixture and mix w/dough hook on low speed to combine

when dough has come together in a shaggy mass, knead 3-4 mins until smooth & slightly tacky

Shape smooth dough into a ball. Cover and let rise in an oiled bowl in a warm spot for 1 hr.

Punch dough down, cover and let rest 10 more mins.

Divide dough into eight pieces, shape them into rounds. Cover and let rest 10 mins.

Use your thumb to punch a hole through the bottom center of the bagel and gently stretch it open.

Cover shaped bagels and let rest 10 minutes.

Boil 1 minute per side.

Brush with egg wash, top with any toppings you want. Bake 20 mins at 425F.
