Toast hazelnuts on a sheet pan at 350F for 20 minutes.

Remove as much of the excess hazelnut skins as you can by rubbing them around in a clean towel.

Arrange the hazelnuts on a silicone mat lined sheet pan.

Combine sugar and water in a skillet over medium heat. Swirl frequently as the sugar starts to melt.

Continue swirling as the sugar mixture bubbles.

When the mixture turns golden brown, it’s done. Remove from heat and quickly...

Pour it over the hazelnuts. It hardens fast. Use a spatula & lift the silpat to keep in the middle.

Crack the hazelnut praline into pieces.

Transfer to a food processor and run on high until the mixture turns into a sandy powder.

Drizzle in sesame oil w/the machine on high. Keep running until it’s the texture of peanut butter.

Finish by adding salt to taste.

To make chocolate hazelnut praline paste blend in 1 oz melted unsweetened chocolate.
