Combine chickpeas, lemon juice, garlic, and tahini in the bowl of a food processor.

Puree well, squeezing in additional lemon juice with the machine running.

With the machine still running, slowly stream in ice water until desired consistency is reached.

Transfer to a container, top with grated garlic and a drizzle of olive oil.

Serve with minced garlic, olive oil, and freshly cracked black pepper over the top.
