Let’s Make Brussels Sprouts Carbonara

Peel and core 10 large Brussels sprouts.

Cook pasta according to package directions.

Fry up some bacon. Once it’s crispy, set aside. Leave the pan and drippings on the stove.

While bacon and pasta cook, combine eggs, egg yolks, milk, and cheese in a large bowl. Whisk well.

Stir fry Brussels sprouts in remaining bacon fat 3-4 mins, then remove to bowl and set aside.

When pasta is almost done cooking, take 1/4 cup pasta water and whisk it into the egg mixture.

Drain the pasta and immediately add it to the egg mixture. Toss vigorously to coat.

Transfer pasta mixture to skillet and cook on low heat until sauce thickens (2 mins).

Transfer pasta back to bowl. Add Brussels sprouts and half the bacon. Stir to combine.

Top with additional bacon and serve.
