Lemon Zucchini Bread with Zesty Lemon Glaze

Zucchini is easy to grow! Veggie ‘grow bags’ work great if you’re short on garden space.
Line a loaf tin with parchment & spray with non-stick spray.

1 3/4 C flour • 1 tsp baking soda • 1 tsp baking powder • 1 tsp kosher salt

1 C sugar • 1/2 C softened butter or oil • 2 eggs

1 tsp vanilla • 1/4 C plain yogurt or sour cream.

1/2 C fresh lemon juice • 1 T zest • 1 1/2 C grated zucchini

The mix will separate due to the yogurt & acid. It’s ok. Add the flour mix & it will come together.

Bake at 350f for 40-50 min or until done. Cool before turning out.

Glaze: 1 C powdered sugar • 2 tsp zest • enough lemon juice to thin & obtain a thin frosting texture

Slice & serve. Lovely, bright, and lemony.
