Leftover Turkey Thai Green Curry!
Looking for a recipe for that holiday leftover roasted turkey? Whip up a curry!

Start by slicing some carrots! They add color & sweetness.

Slice a red bell pepper into thin strips. Tip! You can use a variety of veggies in this dish!

Let’s add some heat! Seed & dice one jalapeño pepper.

Finely dice 1/2 of a yellow onion. Onion helps create a savory background note to the dish.

Next, garlic! Tip! Smash the garlic cloves with the back of a knife, using the heel of your hand!

Let’s get cooking! Heat a tablespoon of vegetable oil in a large skillet over medium high heat.

Start adding your aromatics; the onion, garlic, & jalapeño pepper.

We want to sauté our vegetables, but not brown. Adjust your heat accordingly.

Now, let’s add the carrots & red pepper!

We’ll add canned bamboo shoots & baby corn for texture.

Be sure to drain & rinse your canned vegetables well. We want to wash away any tinny taste.

Add a big pinch of kosher salt.

Time for the curry paste! Green curry paste is made with peppers, cilantro, & lemongrass.

Once the curry paste is heated, add full fat unsweetened coconut milk.

Stir until the curry paste is incorporated.

Let’s amp up the flavor! We’ll add several dried Thai lime leaves to the mix!

Next up, add a bit of sugar & fish sauce.

Let’s talk turkey! Leftover shredded turkey (or chicken!) works great in this recipe!

Add a handful of fresh cilantro & heat until simmering.
