Spaghetti Squash

12 ounces, peeled and deveined
Shrimp

6 cloves, minced
Garlic
1 cup
Vegetable Stock
1 cup
Heavy Cream
1/2 cup
Parmesan Cheese
1 tablespoon, roughly chopped
Parsley
Poke holes in squash. Microwave 8-12 minutes until tender. Cut & scrap out the inside with a fork.

Melt butter in large skillet over med heat. Add shrimp. Cook on one side 2-3 min, flip, cook 1-2 min

Remove shrimp to a plate. Add the garlic to the pan. Cook 1 minute then stir in the stock & cream.

Whisk in the Parmesan cheese, bring to a boil to thicken. Stir in squash and cook to warm through.

Stir in the shrimp or simply top with the shrimp.

Garnish with parsley and enjoy!
