Prepare your ingredients before you begin.

Season chicken with salt & pepper. Dredge in almond flour to coat both sides.

Melt butter in skillet on med-high. Cook 3 min per side or until cooked through. Remove to a plate.

Return pan to med heat. Add butter, shallots & garlic. Cook 2-3 min until softened.

Add wine. Raise heat. Reduce by half. Stir in heavy cream. Cook a few minutes to thicken.

Add spinach. Cook until wilted down, about 2-3 minutes.

Nestle the chicken back into the pan to warm.

Spoon sauce over the chicken. Sprinkle on Parmesan cheese and parsley. Serve immediately.
