Combine all the ingredients for the marinade together in a small bowl.

Reserve half the marinade. Mix chicken with the other half. Let sit while you prepare the veggies.

Cut peppers and onions into think slices.

Rice the cauliflower in a food processor or with a grater.

Add olive oil to one large skillet with the cauliflower. Cook until tender, about 10-15 minutes.

In a second skillet, add the chicken and cook until no longer pink in center. Remove to a plate.

Add the peppers and onions to the skillet with 2-3 tablespoons of marinade. Cook 5-7 minutes.
