Ingredients for the cauliflower grits.

Rice the cauliflower super fine in a blender.

It may stick together. Don’t worry - that’s perfect!

Combine cauliflower, heavy cream, butter, salt and pepper in a saucepan.

The mixture will be very thick at first.

Cook until the cauliflower is tender. It will become more creamy.

Remove pan from the heat. Stir in the cheddar cheese to melt.

The “grits” should be well blended, creamy and resemble traditional grits.

Ingredients for the Cajun Shrimp.

Add the diced bacon to a cast iron pan. Cook until crisp.

Remove with a slotted spoon. Reserve 1-2 tablespoons of the bacon grease in the pan.

Combine the shrimp with the Cajun seasoning.

Add the shrimp the the pan with the bacon grease. Cook until opaque, 2-4 minutes.

When the shrimp are almost done cooking, stir in the garlic.

Stir in the bacon and toss to combine.

Serve the cheesy grits topped with the Cajun shrimp.

Add a squeeze of fresh lemon, if desired.
