Kale, Chopped

Bacon

Blue Cheese Crumbles

Bacon fat

Red wine vinegar
1 tbl
Granulated sugar
Salt and pepper
1 tsp
Dijon mustard

Extra Virgin Olive Oil

Asian Pear (or Apple)
Massage kale with your hands for 30 seconds

Cook bacon and reserve bacon fat for later. Chop bacon and set aside

Combine bacon fat, red wine vinegar, sugar,Dijon and salt + pepper in a bowl and whisk to combine

Toss kale+ shredded cabbage in a bowl. Sprinkle bacon and blue cheese over top

Pour vinaigrette over salad.
