What you’ll need
Thai Red Curry Paste
Red Bell Pepper
Organic Sweet Potato
1 Cup Diced Carrot
Chop up all your veggies and add to skillet with 2 tbsp avocado oil. Let veggies soften.
Once veggies have cooked down add 1 1/2 tbsp red curry paste & 3 tbsp garlic.
Add your kale gnocchi, coconut milk and garbanzo beans to your crockpot.
Add your veggies to the crockpot & one more can coconut milk. Stir to combine. Cook on high 4 hours
A few minutes before serving add your greens! Add a juice of a lime, salt, pepper & cayenne!
