Jarlsberg Roasted Vegetable Bake

Lightly coat one sliced Asian eggplant with oil.

Grill, and remove when char marks are on both sides and eggplant is slightly tender.

Grill 1 medium yellow squash. Remove & set aside.

Grill 2 medium Zucchini. removed & set aside.

Grill 3-5 scallions & 1 medium red pepper sliced. Add a little oil if needed.

Removed & set aside.

Preheat oven to 350F. Assemble by layering 1/2 of the roasted veggies in a casserole dish.

Add 1 large clove minced garlic + 1 tsp Italian seasoning & salt & pepper to taste.

1 cup cherry tomatoes cut in half. Half of the grated Jarlsbereg cheese (1 1/2 cup).

Layer the rest of the roasted veggies.

Bake @ 350F for 30 minutes or until the cheese is melted and veggies are tender.
