Instant Pot Mashed Cauliflower
On sautee mode, heat olive oil and cook onion about 5 minutes

Add garlic and cook another minute

Pour chicken stock in with the onion ans garlic. Add steamer basket and add cauliflower

Cover Instant Pot, making sure it is set to sealing. Cook on manual pressure for 2 minutes

Instant steam release after cooking, place cauli flour into a blender

Add onion and garlic mintier after draining the stock. Add cream cheese

Pulse to desired consistency

Transfer to a bowl and stir in parmesan cheese
