Chop up one medium yellow onion

Chop up 1 cup of celery

Chop up one green bell pepper

Chop up one red bell pepper

Slice 14 ounces of andouille or smoked sausage into quarter inch rounds

Turn your Instant Pot to the sauté setting and wait until it says HOT on the display

Add in 1 Tbsp of olive oil and the onion. Sauté for 4 minutes.

Add in 1 Tbsp of minced garlic into the pot and sauté for 20 seconds.

You’ll need 1.5 pounds of chicken breasts cut into cubes

You’ll need 4 cups of chicken broth. I use 4 tsp of Better than Bouillon and 4 cups of water

1/2 t thyme, 1 1/2 t paprika, 2 bay leaves, 1 t kosher salt & pepper & garlic powder, 1/4 t cayenne

Add all ingredients into Instant Pot

Set the manual/pressure cook button to 1 minute on high pressure

In a separate Instant Pot (or on the stove) make rice

When time is up let the pot sit for 10 minutes and then release any remaining pressure. Remove lid.

Melt 6 Tbsp of butter

Whisk 6 Tbsp of flour, a little at a time, into the butter

Add in some liquid from the pot into the butter/flour mixture

Turn Instant Pot to sauté and stir in the flour mixture

It will thicken the gumbo in a few minutes

Scoop rice into bowls

Serve gumbo with rice and green onion. If you love spicy foods add in some Tabasco sauce
