What you’ll need
Chicken Breast
Rosemary
Lemon
Butternut squash
Leeks
Olive oil
Onion
Garlic
Slice skinless boneless chicken breasts

Marinade in olive oil, rosemary, salt, pepper and lemon juice

Slice the onion

Slice the leeks

Put the squash, leeks and onions on a baking tray

Add more olive oil, salt, pepper, lemon and rosemary

Place the vegetables in the oven at 350 for 30 minutes

Sautée the chicken in olive oil, garlic and butter for 10-15 minutes

Place the chicken off the heat when it begins to brown

Add the chicken to tray of vegetables and broil for 5 minutes

Plate the wintry mix with a side of frisée, dressed with honey-mustard vinaigrette & shaved parmesan
