Chop half your cucumber into small pieces

Peel the other half into small strips

Add your chopped & peeled cucumber ( finely chopped) into mixing bowl with Greek yogurt

Finely chop half a shallot & add along with minced fresh dill or mint

You can add chopped tomatoes or pico de Gallo for more flavor! Add salt, pepper & garlic powder 🧂

Add a drizzle of EVOO & mix. Let sit for 30 min or overnight for best flavor!!
