How toSun-Dried Tomato Tzatziki

What you’ll need
2 cups
Greek Yogurt
1 (juice & zest)
Lemon
1 teaspoon
Black Pepper
1 cup
Sun-dried Tomatoes
1 bunch
Dill
2 teaspoons
Olive Oil

Garlic Cloves
1 teaspoon
Kosher Salt
Place yogurt into a bowl.

Chop sun-dried tomatoes, and add to the bowl.

Grate 2 garlic cloves into the bowl.

Chop dill, and add it to the bowl.

Zest and juice lemon, and add to the bowl.

Add salt, pepper, olive oil, and combine. Let sit for at least 1 hour for flavors to marry.

Spoon out and serve. Great as a dip for pita and veggies. Or as a sauce for my Zucchini Cakes.

Options: Sub 1 cup olives, or 1 grated/drained cucumber for tomatoes to make traditional tzazaki.
