Egg yolks
1/2 Cup
Superfine Sugar
1 Tsp
Green Liquid Food Color
4 Cups
Heavy Cream
1 Tsp
Vanilla Extract
Green Sugar Sprinkles
Butane Torch
1 split
Vanilla Bean
Sous Vide Set Up

Mason Jars
Set Sous Vide to 192°F and allow to warm up while making your mixture.

Whisk sugar into egg yolks.

Warm cream and vanilla bean on Medium heat until cream simmers.

Slowly add hot cream to egg yolk mixture while whisking to temper egg mixture.

Add vanilla

Add food coloring if you decide you want them green. If not leave it out.

Pour mixture into jars and “finger tighten” lids.

Slowly lower into water with tongs. And cook for 1 hour.

Place into refrigerator for 2+ hours

Sprinkle with sugar and torch until sugar caramelizes.
