What you’ll need
Avocado Oil (or other high heat oil)
1 large
Orange Bell Pepper (or any type works)
3 cups
Sun-dried Tomato Pesto
8oz
Pasta (any type works!)
1 medium
Onion
1/2 tablespoon
Minced Garlic
1 lb
Shrimp
5 oz
Shiitake Mushrooms (or other type of mushrooms)
Salt + Pepper To taste
Start boiling water for pasta.

Spray pan with a high heat cooking oil.

Sauté onions until they become translucent.

Sauté mushrooms until browned.

Sauté garlic for 30 seconds.

Remove ingredients from pan. Spray a little more cooking oil and cook bell peppers until they soften

Add sun-dried tomato pesto to pan and heat for 3 minutes.

Add shrimp to pan and season with salt and pepper.

Add onions, mushrooms , bell pepper & garlic to pan. Season to taste. Cook until shrimp are pink.

Boil pasta according to package instructions.
