What you’ll need
1 square
Hard Yellow Cheese such as Kefalotiri, Kasseri, Graviera, or any grilling cheese
1/4
Lemon
1/4 cup
Flour
1/2 ounce
40-proof alcohol like Metaxa
1 tablespoon
Olive Oil
Moisten cheese with water and then coat in flour.

Heat 1tbs oil in a frying pan over medium high heat.

Fry cheese until it starts to brown. Consider turning heat down to medium of it gets too hot.

Turn and brown it on the other side.

Take pan off the heat. Carefully pour in liquor, and immediately flambe. Extinguish with lemon. Opa!

Slice into squares and serve.
