Start with searing Italian sausages until browned on both sides.

Meanwhile wash and peel 6 potatoes.

Cut onions into slices. I get super self conscious about my Chicago accent when saying “sausage” 🤣

Repeat slicing with peppers!

Look at all those colors!

Chop potatoes into even cubes and add to bottom of Rockcrok. They will absorb the sausage fond!

Add veggies on top of potatoes plus 3 cloves of garlic, salt, and pepper.

Add sausages on top. Cover and roast in a 325° oven for 60 minutes.

After an hour check for doneness in potatoes. If more time needed leave uncovered for another 15 min

Add your favorite pasta sauce over the top before serving.

Serve with grated Parmesan or mozzarella cheese and garlic bread.
