What you’ll need
Organic Red Peppers
Organic Brown Mushrooms
Fresh red and green organic salsas
Cut up the red pepper (you can choose any color you’d like)
Cut up an onion. Start by cutting off each end. Then remove the outer layer. Chop it up!
Wash mushrooms. Cut off ends of the mushrooms and slice
Crack eggs into a bowl
Whisk eggs until the liquid is the same color and is frothy
Add some fresh ground pepper and whisk again. See bubbles in the eggs to know it’s whisked enough
Turn on the stove to medium. Melt the butter and spread over the pan
Add the chopped onions first. They take the longest to cook
Once onions are becoming translucent, add the chopped peppers
Once the red peppers have softened a little, add the mushrooms (they cook the quickest)
Once the mushrooms have browned and softened, put all the veggies into a bowl for now
Turn heat down a bit to low-medium. Add some butter and melt in pan. Add eggs. Then add the veggies
Keep the eggs moving so they stay consistent and don’t get overcooked
Keep scramblin’. Add some black pepper
Add some cajun seasoning
Remove from heat while eggs are still wet. Scramble. Don’t worry, they’ll cook more in the hot pan.
Add some salsa and chopped fruit. Enjoy!
