How toMAKE SWEET POTATO GNOCCHI IN SAGE GHEE SAUCE

What you’ll need
450 grams
Organic Sweet Potato
1/2 cup
Nutritional Yeast
3 tsp divided
Sea Salt
4 Tablespoons
Ghee
1 cup
Walnuts
1/2 tsp
Pepper
1/2 tsp
Nutmeg
1 1/2 - 2 cups
Gluten-free flour
1 Tablespoon
Coconut Sugar
5 tablespoons
Fresh Sage
Scoop out insides of sweet potatoes and mash in a large bowl. Add in sugar and 1 tsp salt and mix

Roll onto floured surface and make four long ropes about 1 inch thick. Cut into 1 inch pieces.

Place walnuts in food processor , add yeast, toast.

roll over a fork to make ridges.

Bring a large pan of water to the boil, add tsp salt, boil gnocchi in batches until tender, 5min .

Cool completely at room temp. Freeze any you won't use at this point.

Prepare brown butter sauce. Add ghee, sage and sauté gnocchi.

Let it get nice and crispy !

Sprinkle with walnut parmesan before serving.
