Organic Quinoa

Zucchini, chopped And Roasted
2 cups
Arugula
1 cup
Roasted Corn

3 tbs salsa

Sweet Potatoes chopped and roasted
Chop a microwaved potato & raw zucchini. Season with garlic, chipotle powder, salt and avocado oil.

Roast your chopped veggies at 400 degrees for 15 minutes. Steam corn

Start with 1 C cooked quinoa add arugula. Top with roasted veggies, corn, tomato, cilantro and egg

Be sure to garnish with fresh lime if you have some!
