Preheat oven to 350. Cut around the stem of the pumpkin.

Scrape out seeds with a spoon.

Season lightly with salt. Flip over so skin side is up and roast for up to 1 hour until fork tender.

Let cool and scoop softened flesh from pumpkin skins.

Blend until smooth. Use a tamper for the blender if needed. Do not add liquid!

You could also use a food processor but it must be completely smooth.

Over low heat, cook in a wide pot so there is more surface area to cook off water from the puree.

Stir occasionally until puree has thickened to consistency of mashed potatoes.
