Bake or boil enough russet potatoes to make one pound of cooked potatoes. Let potatoes cool.
With a potatoe ricer, rice the potatoes onto a work surface.
Whisk together one large egg and 1/2 tsp salt. Pour over riced potatoes and gently mix in.
Sprinkle 1 1/4 cups all-purpose flour over the mixture and mix together to form a ball. Be gentle.
Rest for 20 min. Form a log 1/2 in. diameter with a piece of the dough and cut into 1 inch pieces.
Shape the pieces with a fork or gnocchi board, or cook the pieces without shaping them.
Cook the gnocchi in salted boiling water in small batches of 10-12 at a time.
Cook until the gnocchi floats to the surface. Remove and serve with some roasted squash & cheese.
