Remove extra scales. Clean your fish with lime, small amount of distilled vinegar and water!!

You can choose to season your fish in a bowl or on a large cutting board!!

The longer your fish sits, the better it will marinate. Jamaican Seasoning is MAGGI brand.

After 30+minutes . Lightly coat each fish so they won’t stick. (CRUNCHIER FISH)

Use oil of your choice. Pre-heat pan 3-5 mins. Fry each side between 5-8 mins on medium heat!

For the sauce you need 1/2 cup of vinegar, onions, bell pepper of any color, scallions, and cilantro

Cut up all your ingredients for the escovitch sauce

Boil 1/2 cup of vinegar & 4 cloves of minced garlic for 2mins. Then add all the other ingredients.
