Season both sides heavily and bring filets to room temperature.

Heat cast iron griddle with Kerrygold butter and fresh garlic until hot and bubbly on high heat.

Place filets on the hot griddle and sear each side for 3-4 minutes. Then sear the bacon sides.

Only turn filets over once for tenderness. Drizzle the hot butter on top of filets.

Place cast iron skillet in a preheated 400° oven for 8 mins for medium rare. 10 minutes for medium.

Allow filets to rest for 5 minutes under foil tent and serve with compound butter. Enjoy!
