In a large bowl, add eggs

Add the chopped fresh spinach

Chopped sun-dried tomatoes,

Salt and pepper,

And milk of choice (I used unsweetened almond milk)

Stir the ingredients together.

Put in a greased muffin pan.

Bake at 350 degrees for around 20 minutes.

If you are meal prepping these, pull these out a little earlier so they won’t be overcooked
