1shallot,2cloves garlic,cilantro,culantro (opt.),parsley,salt, pepper, red pepper flakes,oil,vinegar

This is “culantro” herb native to Mesoamérica and the Latin Caribbean. Tastes like über cilantro!

Roughly chop the shallot and garlic (you will finish it in the blender).

Roughly chop the herbs and green onions (scallions)

Place the shallots, garlic, herbs and onions in a blender

Add salt, pepper and red pepper flakes

Add half of the oil and all of the vinegar (you’ll add more later)

Blend it until it comes together (you may have to add a bit of water to get the motor going)

Add the remaining oil in a thin stream. Voilà! Chimichurri! This is just one version of many.
