How To Make Butternut Squash Soup
Quick note: this soup freezes really well!!

Cut/clean/peel 1 large butternut squash

Time saving tip: You could use pre-cleaned/chopped butternut squash!
Chop 1 medium yellow onion

Add 2 TBS butter to a large pot and add onion

Add 2 garlic cloves, pressed

Add 1/2 tsp dried thyme

Add 1/4 tsp cinnamon and 1/8 tsp cayenne (cook for 5-7 min)

Add squash, 2 cups water, 1.5 cups broth

Add 1 cup 1/2 and 1/2

Add a squeeze of lemon

Cool until squash is tender (~20 min)

Blend soup (use an immersion or regular blender)
