How toMake Buttermilk Biscuits

What you’ll need
3 cups
All-purpose flour
3/4 cup (1 1/2 sticks)
Very cold unsalted butter
3/4 cup
Cold buttermilk
2 tablespoons
Granulated sugar
2 1/2 teaspoons
Baking powder
1 egg mixed with 1 tablespoon cream
Egg wash
1 tsp
Kosher salt

Large egg
Whisk your dry ingredients together in a bowl. Measure wet ingredients into a different bowl.

Grate your very cold butter on the large holes of a box grater

Using your hands, quickly work the butter into the flour until some bits of butter are pea-sized.

Pour wet ingredients into dry and mix, fluffing with a fork until it barely comes together in a ball

Place dough on work surface and pat into a circle. Fold it over on itself twice & press to 1” thick

Use a 2” cookie cutter to cut circles. Place on tray covered with silpat or parchment.

Brush on egg wash and (optional) sprinkle with coarse sea salt

Bake at 400 degrees for 15-18 minutes, or golden brown.
