What you’ll need
2 lbs - breasts, wings, things, drumsticks
Chicken
1 bunch
Fresh cilantro
3 cups
White Rice - Long Grain
1 tablespoon
Capers
Salt + Pepper

Green Pepper
3 cloves
Fresh Garlic
1 can
Stewed Tomatoes
15 or so
Spanish Olives
Garlic Powder

Onion
3 Tablespoons
Olive oil
1/2 bag
Frozen Peas
1.5 packets
Sazón
5-6 tomatoes

Super easy one pot meal! Here we go...

You’ll need about 2 lbs chicken, rinsed and patted dry. Season with Adobo or s&p, garlic powder.

Make recaíto: Add peeled garlic, green pepper (seeded/chopped), cilantro & a couple cherry tomatoes

Add a couple tablespoons of olive oil. Make sure your container is large enough!

Pulse until large pieces are tiny. This won’t be completely smooth.

Add olive oil to pot and heat. Brown chicken on both sides. May have to do this in a couple batches.

When chicken has good color, flip to finish browning.

After your chicken is browned, add 3 tablespoons of recaíto to pot and mix. Simmer for 10 minutes.

While your chicken simmers, bring a kettle of water to a boil.

Add rice, stewed tomatoes, olives, capers and sazón.

Give it a good stir...

Add 3 cups of water that you boiled earlier and let simmer until most of the water is absorbed.

Once most of the water is absorbed, cover pot and simmer on low about 40 minutes. Stir after 20 mins

Add 1/2 a bag of frozen peas, stir and cover. Cook for 15 more minutes.

All done! Taste before serving and add salt & pepper if needed. Enjoy! 😘
