What you’ll need
1/4 cup
onion, chopped
1 whole + 2/3 cup
egg + egg whites
1/4 cup
goat cheese
1/2 cup
red bell pepper, chopped
1 cup
kale or spinach
1/2 cup
fresh fruit (your choice)
1/2 cup
mushrooms, sliced
2 slices
uncured bacon, cooked
Set burner to medium-medium low.

Add 1 tsp. avocado oil to a nonstick skillet

Add 1/2 cup chopped peppers, 1/4 cup onion, and 1/2 cup mushrooms to skillet and sauté 4 minutes

Add 1 cup fresh spinach and sauté 1 minute

Whisk together 1 egg + 2/3 cup egg whites

Add beaten egg to skillet over sautéed veggies

Add 1/4 cup goat cheese, 2 strips chopped bacon, and cover for 4-6 minutes.

Carefully fold in half using a wide spatula.

Plate and garnish with more bacon, spinach, and goat cheese

Serve with 1/2 cup fruit on the side!
