Preheat oven to 525° F and line your pizza pan with parchment paper.

Mix baking powder (5g), coconut flour (10g), and all-purpose flour (40g) into a bowl.

Melt ricotta (60g) and mozzarella (55g) in the microwave for 30 secs; add 100g of egg whites.

Add your dry ingredients into the cheese and egg white mixture. Mix until it is a wet dough.

Spoon dough onto the lined pan. Wet your fingertips and spread it out thinly (it will rise).

Cook for 8-12 mins until golden. Add sauce (120g) and remaining mozzarella (45g).

Cook for an additional 3-5 mins. Remove from the oven, slice, and serve 1 to 2 people!
