What you’ll need
1 cup
Unsweetened Coconut Flakes
1 cup
Pitted Dates
1/3 cup
Chocolate chips
1/2 tsp
Coconut oil
Preheat oven to 400 degrees. Toast shredded coconut on a sheet pan for 5-10 minutes.

Add the toasted coconut and dates to the bowl of a food processor.

Pulse until it's combined.

Roll into balls and flatten to form cookies. Then using a straw, poke a hole in the middle.

Place cookies in the freezer for 20 minutes to harden up.

Melt chocolate chips and coconut oil in 20 second bursts in the microwave until it's melted.

Dip the bottom of each cookie into the melted chocolate. Place back on the sheet pan.

Drizzle the remaining chocolate on each cookie.

Pop cookies in the freezer for about 10 min-they'll release easily once they've cooled and hardened.
