Slice your eggplant lengthwise

Bring sauce and water to a low boil over medium heat, then add lentils

Roll your basil and chop

Add all ricotta ingredients to your blender (I add 2 cloves garlic too)

Brush oil on each side of eggplant slices, arrange on baking sheet, bake 425F for 13 mins

Layer sauce, eggplant, ricotta- top layer sauce

Sprinkle Vegan Parmesan cheese. Bake 375F covered in foil for 30 mins- remove foil bake 15mins
