What you’ll need
1 pound
Salmon
1, beaten
Eggs
1 tablespoon
Mustard
1 teaspoon
Black Pepper
2, minced
Garlic Cloves
1 bunch, chopped
Scallions
1/2 cup
Bread Crumbs or Almond Flour
1 bunch, chopped
Dill
1 teaspoon
Kosher Salt
1, chopped
Red Bell Pepper, chopped
1/2 cup
Feta Cheese
1 bunch, chopped
Parsley
1 tablespoon
Olive Oil
Preheat oven to 425. Pat salmon dry, season with olive oil, salt & pepper. Roast 10 min until cooked

Cook scallions and bell pepper in 1 tablespoon olive oil until soft. Let cool along with the salmon.

Flake salmon into a bowl. Discard skin.

Add the rest of ingredients to the bowl. Mix well. I like to use my hands.

Form cakes on a sheet pan or plate. Refrigerate for 15 minutes.

Heat 1 tbs olive oil in a non-stick pan over medium-high heat. Cook salmon 3-5 minutes.

Carefully flip burgers over and cook for another 3-5 minutes.

Serve with tzatziki, a squeeze of lemon, or as a burger in a bun.
