Whisk 2 eggs, 1/2 cup white sugar, 1/2 cup brown sugar, 4 Tbsp melted coconut oil, 1 tsp vanilla.

1 3/4 c. GF flour, 1 tsp baking soda & baking powder, 1/2 tsp ginger, cinnamon & nutmeg,2 c. carrots

Add the wet ingredients to dry. Mix in 1/2 cup unsweetened applesauce. Stir until combined.

Line an 8x12 pan with parchment paper. Pour in batter & spread evenly. Bake at 350F for 40 minutes.

For frosting: 2 Tbsp butter, 1 tsp vanilla, 1 (8 oz) block low-fat cream cheese, 2 c. icing sugar.

Optional: top with chopped pecans or walnuts. Serve and enjoy! 🥕🍰
