How toEasy Lemon Parmesan Pork Chops

What you’ll need

Thin Cut Pork Chops
1 lemon
Lemon Zest

Olive Oil
3/4 cup
Parmesan Cheese
1 cup
Panko Bread Crumbs

Large egg
Salt + Pepper
Beat eggs in a shallow dish and add salt and pepper

Add the zest of 1 lemon to 3/4 cup Parmesan cheese. Zest lemon just on surface. Don’t go too deep.

Stir in the zest

Put 1 cup panko breadcrumbs in a third bowl

Season both sides of chops with salt and pepper

Heat 6 tablespoons olive oil over medium heat

Coat chops in cheese, then egg, then breadcrumbs.

When coating with cheese, really get in there and pat the mixture on!

Dip in egg and flip then let the excess drip off

Coat evenly in the breadcrumbs. I ended up needing more. Approximately 1 & 1/2 cups total.

Fry in shallow pan for 3 minutes on each side until browned. Thicker chops need 6 mins on each side

In between batches, add a little more oil if needed. (I should have)

Use thermometer to check the internal temp is at least 165° F if unsure of doneness

Pork should be mostly white, but a tinge of pink is ok. If unsure, check temp is 165° F

I served with broccoli and quinoa. I topped with a little lemon juice
