Boil a pot of water.

Lower heat to simmer, add eggs gently into pot.

Wait 7 mins.

Gently scoop eggs out and put in a bowl of ice water.

Wait 3 mins.

Peel shell. Be gentle as the eggs are soft.

Add 6 tablespoons of water to a bowl or fridge plastic bag.

Add 2 tablespoon of mirin.

Add 2 tablespoon of light soya sauce.

Put your eggs in a bag together with the sauce to marinade for at least 24 hours in the fridge.

Some add dark soya sauce and some sugar in. So it is really up to your preference.

Time to cut open the egg.
