Avocado Oil (or Butter)

Water
Heat a pan to medium-low heat.

Crack eggs into a bowl.

Whisk ‘em together.

Add oil and water (yes, water!) to the heated pan.

Mix the oil and water around.

Pour in whisked eggs.

Using a silicone spatula, drag the eggs from one side of the pan to the other.

Keep repeating the dragging motion until the eggs are cooked.

Season with salt and pepper, and voila!
