Coconut Macaroon Bird’s Nest Cookies
2 extra large or 3 small
Extra Large Egg Whites
14 ozs
Shredded Coconut
1 teaspoon
Pure Vanilla Extract
14 ozs
Sweetened Condensed Milk
Chocolate Eggs Or Jelly Beans For Garnish
Spray mini muffin tin with nonstick spray.

Combine the coconut, condensed milk, and vanilla in a large bowl.

Stir coconut mixture until fully combined.

Separate egg whites from the yolk.

Whip the egg whites on high in a mixer with the whisk attachment until...

Gently fold the egg whites into the coconut mixture.

Drop 1 tablespoon of the coconut mixture into each prepared muffin cup.

With the back of a measuring spoon, lightly press the mixture up the sides, forming a nest.

Bake for 25-30 minutes at 300 degrees until golden brown. Cool on wire rack.

Run a knife around cookie to loosen and lift out carefully.
