How toCheesy Cauliflower-Grits

Dump bag of cauliflower into pot with water.

Light stove top, to medium height heat.

Sprinkle a little salt in the water.

Add a lid, off center, and cook until cauliflower is soft.

In a separate bowl, combine shredded cheddar, two tablespoons butter, and two ounces cream cheese.

Save a scoop of cauliflower water!

Drain cauliflower.

Mash cauliflower with cheeses and butter.

Mash until it resembles grits!

Stir to combine everything well. *if too dry, add a smidge of cauliflower water.

Taste to adjust seasoning. Adding more salt if necessary, as well as a few grinds of black pepper.

Sprinkle a few green onion tops for added flavor!
