What you’ll need
1 1/2 pounds
Zucchini
1 bunch
Scallions

Eggs
1 cup
Panko Breadcrumbs
1 bunch
Dill

Cheese Cloth or Tea Towel

Feta Cheese

Position a strainer over a bowl and line it with a cheese cloth or towel and grate zucchini into it.

Add salt to the mixture and allow it to drain for 20 minutes. Preheat oven to 375°.

Squeeze out as much moisture as you possibly can.

Chop scallions and add them to a mixing bowl.

Chop dill and add it to a mixing bowl.

Shred cheese into a mixing bowl.

Add the zucchini, breadcrumbs, feta, pepper, and eggs to the bowl and mix.

Line a baking sheet with parchment paper. Spray with non-stick cooking spray.

Portion out cakes: Roll them in a ball & lightly flatten.

Bake for 30 minutes.

Plate and serve.
