Cut a head of cauliflower into 1" thick slices as so. (But -- oops! -- curl your fingers under.)

Add both to a cold pan with several glugs of olive oil, a big sprinkle of salt, & red pepper flakes

Sautee over med-high heat. You want to end up with browned, soft veg that's breaks into small pieces

In the meantime, cook cut pasta until very al dente, about 5 min fewer than the box says.

Once the cauliflower is ready, add about 1 cup heavy cream & some pasta cooking water. πŸ˜‹

And a shit ton (technical term) of Pecorino or Parm, if that's all you have, too.

Toss pasta with creamy cauliflower. Cook a little longer to thicken sauce. Add more cheese & salt 😻

Next! Toast panko in olive oil & toss with MORE cheese. You want golden brown clumps of goodness.

Serve pasta topped with breadcrumbs & chives. I add a drizzle of high-quality olive oil too. πŸ’₯πŸ’₯πŸ’₯
