How to“lobster-like” Mushroom Roll

chop 18 ounces of OYSTER mushrooms

have skillet warm with a little olive oil, add mushrooms

mix in 2 tablespoons old bay seasoning, cook until tender (little s+p too)

1/4 cup of chopped celery

2 shallots chopped

2 tablespoons of chives 1 tablespoon of dill

add 3 tablespoons of white vinegar— mix all ingredients including cup of vegan mayo

add mushrooms to mix, taste and add more of anything you feel should stand out (such as vegan mayo)

juice from one lemon and 2 tablespoons of melted vegan butter

add to to bread of choice and enjoy!
