What you’ll need
Non Stick Cooking Spray
1 1/2 teaspoons
1/2 cup (plus more for muffin tops)
Finely Chopped Pecans
Whole Wheat Flour
Preheat the oven to 375 degrees and spray or butter two muffin tins.
Combine 2 cups flour, 1 1/2 teaspoons baking soda, and 1/2 teaspoon salt.
Mash two bananas while leaving some chunky texture.
Mix the two other bananas with the 1 cup of brown sugar in an electric mixer for three minutes.
Add 1 teaspoon vanilla, two eggs, and 3/4 cup melted butter. Mix well.
Add the dry flour mixture to the mixer. Mix until just incorporated.
Fold in the other two slightly mashed bananas and the 1/2 cup finely chopped pecans.
Fill muffin tins and top with chopped pecans and a single pecan half.
Bake muffins for 18-20 mins at 375 degrees.
Let muffins cool for five minutes in the pan and about ten minutes on a rack. Then, enjoy!
