Healthy Banana Carrot Bread

Place grated carrots in middle of a towel.

Wrap them up and squeeze out as much moisture as possible. Set aside.

Place very ripe bananas in a bowl.

Mash mash mash mash!

Add eggs, oil, honey/maple syrup, vanilla, vinegar and milk to the bowl. Mix and set aside.

In a blender, combine rolled oats, baking soda, salt and cinnamon.

Pulse until mixture resembles flour.

Pour dry ingredients onto bowl with wet ingredients. Mix.

Stir in grated carrots. 🥕

Mix until well combined.

Pour into a lined loaf pan and top with slice banana if desired.

Bake 40-45 minutes.

Cool in pan for 30 minutes, slice and enjoy!
